I have attached a PDF of the pin-outs for the engine loom connectors on VT/VX (3x 8 pin connectors) and VY/VZ (1x Large white connector and 1x black connector).
I made these from information I collected dismantling and stripping out many LS1 looms for conversions, hence they are all based off LS1 but could easily be adapted to V6 (since a factory V6 will plug into the same body loom).
If using these for an engine conversion all your connections can be made at these connectors. Theres no need to otherwise mutilate the engine harness and add connections elsewhere.
If using the auto P/N switch to provide earth for your starter relay, the Grey/Blue wire must be joined to earth (Black/red) wire at the PIM module connector. In a factory application the PIM will only provide earth for the start relay when VATS anti-theft has passed.
If you want to clean up the loom and removed unused things (based off LS1 loom):
The PIM and throttle relaxer module connectors can be removed. All the wires for these will run back to the control connectors in the diagrams, 2 wires to the PCM, and 3 wires taping into TPS sensor (Do not disconnect TPS for PCM!). The coolant level switch can also be deleted if desired. There is also a green wire with spade connector that can be deleted (not sure what this is)

Just noticed a typo, in black connector 2 the green/black wire is AC relay control not AC fan control. Mustn't of been thinking there

The "Green Unknown" wire on Black connector 2 is Theft Deterrent Horn.
